Chapati (India)

Chapati is a soft, unleavened flatbread made from whole wheat flour, cherished as a staple in Indian cuisine. Its simple ingredients and quick preparation make it a versatile accompaniment to a variety of dishes, from curries to vegetables. With its slightly chewy texture and ability to soak up sauces, chapati is a beloved bread that brings warmth and comfort to any meal.

Ingredients (for 8 servings):

  • 2 cups whole wheat flour (plus extra for rolling)
  • ½ tsp salt (optional)
  • ¾ cup water (adjust as needed)
  • 1 tbsp oil (optional, for softer chapatis)

Instructions:

  1. In a large bowl, combine the whole wheat flour and salt (if using). Gradually add the water and mix until a soft dough forms. If using oil, add it at this stage. Knead the dough for about 5-7 min. until smooth. Cover it with a damp cloth and let it rest for 20-30 min.
  2. After resting, divide the dough into 8 equal portions. Roll each portion into a ball and flatten it slightly.
  3. On a lightly floured surface, use a rolling pin to roll each ball into a thin circle, about 6-7 inches in diameter. Keep the thickness even, using additional flour as needed to prevent sticking.
  4. Heat a tava (flat skillet) or non-stick pan over medium-high heat. Once hot, place a rolled chapati on the skillet. Cook for about 30 seconds, or until bubbles begin to form on the surface. Flip it over and cook for another 30 seconds. Press gently with a clean kitchen towel or spatula to encourage puffing.
  5. If desired, for extra puffing, you can place the chapati directly on an open flame for a few seconds, allowing it to puff up. Alternatively, continue cooking on the skillet until both sides have golden brown spots.
  6. Remove the chapati from the skillet and keep it warm in a covered container. Repeat with the remaining dough. Serve warm with your favorite curries, dals, or vegetables.
