Pumpkin Sandwich Cookies

These pumpkin sandwich cookies are soft, spiced, and packed with fall flavors. Sandwiched together with a creamy, tangy cream cheese filling, they make for a perfect treat to enjoy with a cup of tea or coffee. The warm pumpkin spice and rich filling create a delightful bite in every cookie!

Ingredients (for 12 sandwich cookies):

For the Cookies:

  • 1 ½ cups all-purpose flour
  • 1 cup pumpkin puree
  • ½ cup coconut sugar
  • ½ cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

For the Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • ½ cup powdered sugar
  • ½ tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a separate bowl, beat the softened butter and coconut sugar until light and fluffy. Add the egg, vanilla extract, and pumpkin puree, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Drop spoonfuls of dough onto the prepared baking sheet, about 2 inches apart, and flatten slightly. Bake for 10-12 min. or until the edges are set and the cookies are soft but not doughy.
  6. While the cookies cool, prepare the cream cheese filling by beating together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  7. Once the cookies are completely cool, spread or pipe the cream cheese filling onto the bottom of one cookie and sandwich with another.
