Ingredients (for 6 servings):
For the Filling:
1 cup pumpkin puree
1 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp allspice
¼ cup coconut sugar
For the Mascarpone Layer:
8 oz mascarpone cheese, softened
½ cup heavy cream
¼ cup powdered sugar
1 tsp vanilla extract
For the Coffee Soak:
¾ cup brewed coffee, cooled
1 tbsp maple syrup
12 ladyfingers
For the Toppings:
2 tbsp cocoa powder (for dusting)
Crushed nuts (optional)
Instructions:
In a bowl, mix the pumpkin puree, cinnamon, ginger, nutmeg, allspice, and coconut sugar until smooth. Set aside.
In a separate bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until light and fluffy.
In a shallow dish, mix the brewed coffee and maple syrup. Dip the ladyfingers into the coffee mixture, soaking them briefly.
Assemble the tiramisu in individual cups. Start with a layer of coffee-soaked ladyfingers at the bottom of each cup, followed by a layer of pumpkin filling, then a layer of the mascarpone mixture. Repeat the layers if desired.
Dust the top of each cup with cocoa powder and garnish with crushed nuts if using.
Refrigerate for at least 2 hrs. before serving to allow the flavors to blend.
