Pumpkin Tiramisu

Pumpkin tiramisu offers a fall-inspired twist on the classic Italian dessert. Layers of creamy mascarpone, spiced pumpkin, and coffee-soaked ladyfingers come together in individual cups, making them perfect for a cozy autumn gathering or an elegant treat for yourself. These cups combine the richness of tiramisu with the warmth of pumpkin and spices.

Ingredients (for 6 servings):

For the Filling:

  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ cup coconut sugar

For the Mascarpone Layer:

  • 8 oz mascarpone cheese, softened
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

For the Coffee Soak:

  • ¾ cup brewed coffee, cooled
  • 1 tbsp maple syrup
  • 12 ladyfingers

For the Toppings:

  • 2 tbsp cocoa powder (for dusting)
  • Crushed nuts (optional)

Instructions:

  1. In a bowl, mix the pumpkin puree, cinnamon, ginger, nutmeg, allspice, and coconut sugar until smooth. Set aside.
  2. In a separate bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until light and fluffy.
  3. In a shallow dish, mix the brewed coffee and maple syrup. Dip the ladyfingers into the coffee mixture, soaking them briefly.
  4. Assemble the tiramisu in individual cups. Start with a layer of coffee-soaked ladyfingers at the bottom of each cup, followed by a layer of pumpkin filling, then a layer of the mascarpone mixture. Repeat the layers if desired.
  5. Dust the top of each cup with cocoa powder and garnish with crushed nuts if using.
  6. Refrigerate for at least 2 hrs. before serving to allow the flavors to blend.
