Beef Stroganoff 

Beef stroganoff features tender strips of beef and earthy mushrooms simmered in a rich, creamy sauce, then served over warm egg noodles. This classic comfort dish, prepared right in the skillet, is the perfect hearty meal for any night of the week.

Ingredients (for 4 servings):

  • 1 lb beef sirloin, sliced into thin strips
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 8 oz egg noodles, cooked
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the beef strips with salt and pepper. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Sear the beef for 2-3 min. per side until browned. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining olive oil, then sauté the onion and garlic for 2-3 min. Add the mushrooms and cook for another 5-6 min., until softened and slightly browned.
  3. Sprinkle the flour over the mushrooms and stir to coat. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the skillet. Bring to a simmer and cook for 4-5 min. until the sauce thickens slightly.
  4. Lower the heat to medium, stir in the sour cream, Dijon mustard, and paprika until the sauce is creamy. Return the beef to the skillet and simmer for 5-6 min. until the beef is tender and heated through.
  5. Spoon the beef stroganoff over cooked egg noodles and garnish with fresh parsley.
