Balsamic Chicken

This balsamic chicken features tender, juicy chicken thighs seared to perfection in a cast iron pan and simmered in a tangy-sweet balsamic glaze. This simple yet flavorful dish pairs beautifully with roasted vegetables or mashed potatoes for a satisfying weeknight meal.

Ingredients (for 4 servings):

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • ¼ cup balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dried thyme
  • 1 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Pat the chicken thighs dry with a paper towel and season generously with salt and pepper on both sides.
  2. Heat the olive oil in a cast iron skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear for 6-8 min. until the skin is golden brown and crispy. Flip the chicken and sear for another 4-5 min. Remove from the skillet and set aside.
  3. Lower the heat to medium, add the minced garlic to the skillet, and sauté for 1-2 min. Pour in the balsamic vinegar and honey, stirring to combine. Let the mixture simmer for 2-3 min. to reduce slightly.
  4. Add the dried thyme and chicken broth to the skillet, then return the chicken thighs to the pan, skin-side up. Simmer uncovered for 15-20 min., basting the chicken occasionally with the sauce, until the chicken is cooked through and the sauce thickens.
  5. Remove the skillet from the heat and sprinkle the chicken with fresh parsley. Serve hot, with your favorite sides.
