Mac and Cheese

This gooey mac and cheese is the ultimate comfort food, featuring a rich and creamy cheese sauce enveloping tender macaroni, all baked to bubbly, golden perfection in a skillet. It's the perfect one-pan dish for both a casual family meal or a holiday gathering.

Ingredients (for 4 servings):

  • 8 oz elbow macaroni, cooked
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Dijon mustard
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp Parmesan cheese (optional, for topping)

Instructions:

  1. In a large cast iron skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 min. until lightly golden and bubbly.
  2. Gradually whisk in the milk and cream, stirring constantly to avoid lumps. Cook for 3-4 min. until the sauce thickens slightly. Stir in the Dijon mustard, paprika, salt, and pepper.
  3. Remove the skillet from heat and stir in the cheddar and mozzarella cheeses until melted and smooth. The sauce should be rich and creamy.
  4. Add the cooked macaroni to the skillet, stirring to coat the pasta evenly in the cheese sauce.
  5. For an extra crispy top, mix the breadcrumbs and Parmesan together, then sprinkle over the mac and cheese.
  6. Preheat your oven to 375°F (190°C). Transfer the skillet to the oven and bake for 15-20 min. until the cheese is bubbly and the top is golden brown.
