This simple stir-fry is a fast, flavorful dish featuring tender chicken and colorful vegetables tossed in a rich, savory-sweet teriyaki sauce. Serve it over rice or noodles for a healthy, satisfying meal that's not only ultra-simple to prepare, but it’s guaranteed to be a family favorite!
Ingredients (serves 4):
1 lb chicken breast, cubed
2 tbsp vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small broccoli head, cut into florets
1 medium carrot, thinly sliced
3 green onions, chopped
1/2 cup teriyaki sauce (store-bought or homemade)
2 tbsp soy sauce
1 tsp sesame oil
Cooked rice or noodles, for serving
Sesame seeds (optional, for garnish)
Instructions:
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the cubed chicken and cook for 6-7 min., stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Add the remaining 1 tbsp vegetable oil to the same skillet. Toss in the sliced bell peppers, broccoli, carrot, and green onions. Stir-fry for 4-5 min. until the vegetables are tender but still crisp.
Return the cooked chicken to the skillet. Pour in the teriyaki sauce, soy sauce, and sesame oil. Stir everything together and cook for another 2-3 min. allowing the sauce to thicken and coat the chicken and vegetables.
Remove the skillet from heat and serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds if desired.
