Brown Butter Brussels Sprouts

These Brussels sprouts are roasted with a touch of rich, nutty brown butter for a beautifully caramelized, flavorful side dish. This incredible recipe pairs wonderfully with roasted meats, creamy pasta dishes, mashed potatoes, or grain bowls, making it easy to please even the pickiest of eaters!

Ingredients (serves 4):

  • 1 ½ lbs. Brussels sprouts, trimmed and halved
  • 3 tbsp. unsalted butter
  • 2 tbsp. olive oil
  • Salt and pepper, to taste
  • Optional: 1-2 tbsp. balsamic glaze

Instructions:

  1. Set the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small saucepan over medium heat, melt the butter and continue cooking until it turns golden brown and has a nutty aroma, about 3-4 min. Set aside to cool slightly.
  3. In a large bowl, combine the Brussels sprouts with olive oil, salt, pepper, and the cooled brown butter. Toss until the sprouts are evenly coated.
  4. Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 min., stirring halfway through, until they’re golden and caramelized.
  5. Optionally, drizzle with balsamic glaze and toss to coat. Serve hot.
