Patatas Bravas

Spanish patatas bravas are a lively and flavorful addition to any table. Whether served as a tapas dish, a side, or a crowd-pleasing appetizer, patatas bravas bring a touch of Spanish flair to your party spread. This easy recipe captures the essence of classic Spanish tapas, transforming simple ingredients into an exciting and memorable dish for parties, potlucks, or casual gatherings.

Ingredients (for 4 servings):

For the Potatoes:

  • 4 medium russet potatoes, peeled and diced into bite-sized cubes
  • 2 tbsp olive oil
  • Salt, to taste

For the Sauce:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder (adjust for spice level)
  • 1 tbsp tomato paste
  • 1 ½ cups canned crushed tomatoes
  • ½ tsp sugar
  • Salt and black pepper, to taste

For the Aioli:

  • ½ cup mayonnaise
  • 1 garlic clove, minced or grated
  • 1 tsp lemon juice
  • Salt, to taste

Instructions:

  1. Preheat the oven to 425°F (220°C). Toss the potato cubes with olive oil and a generous pinch of salt. Spread them in a single layer on a baking sheet. Roast for 25-30 min., flipping halfway through, until golden and crispy.
  2. In a skillet over medium heat, heat the olive oil. Sauté the onion until soft, about 5 min. Add the garlic, smoked paprika, and chili powder, and cook for 1 min. 
  3. Stir in the tomato paste, crushed tomatoes, sugar, and a pinch of salt and pepper. Simmer for 10-15 min., stirring occasionally, until thickened. Adjust seasoning to taste and set aside.
  4. In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, and a pinch of salt. Refrigerate until ready to serve.
  5. Place the crispy roasted potatoes on a serving platter. Drizzle with the bravas sauce and dollop or drizzle the garlic aioli over the top.
  6. Garnish with chopped parsley or a sprinkle of smoked paprika for added color. Serve warm as a tapas dish or side.

Ingredients

  • 1/2 cup rice vinegar
  • 2 tbsp sugar
  • 2 cups cooked sushi rice
  • 1 cup soy sauce
  • 1/4 cup chopped cilantro
  • 2 tbsp seasame oil
  • 1 tsp chili paste
  • Salt
  • 1 mango, diced
  • 1 avocado, diced
  • 1 lb salmon, diced

Method

  1. Combine the rice vinegar and sugar.
  2. Stir though the cooked sushi rice, and with wet hands, shape into balls.
  3. Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
  4. Refrigerate for 15 minutes.
  5. In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
  6. Combine the mango, avocado and salmon.
  7. Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
  8. Remove the rice cups from the refrigerator, and peel off the parchment paper.
  9. Distribute the salmon mixture between the rice cups.
  10. Garnish, serve and enjoy!
