Garlic Butter Green Beans
Buttery green beans are a simple yet flavorful side dish that pairs tender green beans with rich, garlicky butter, brightened by a touch of lemon zest. Ready in just 15 minutes, this dish is perfect for weeknight dinners or as a crowd-pleasing addition to your next potluck or party spread.
Ingredients (for 4 servings):
- 1 lb fresh green beans, trimmed
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp lemon zest
- Salt and pepper, to taste
- Optional garnish: sliced almonds or grated Parmesan
Instructions:
- Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 min., until they are bright green and just tender. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
- In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted, add the minced garlic and sauté for 1 min., or until fragrant.
- Toss the blanched green beans into the skillet, stirring to coat them evenly with the garlic butter. Sauté for 2-3 min., until heated through and slightly crisp.
- Remove the skillet from the heat and sprinkle the green beans with lemon zest. Season with salt and pepper to taste.
- Transfer the green beans to a serving platter. Garnish with sliced almonds or grated Parmesan, if desired, and serve immediately.
