Garlic Butter Green Beans

Buttery green beans are a simple yet flavorful side dish that pairs tender green beans with rich, garlicky butter, brightened by a touch of lemon zest. Ready in just 15 minutes, this dish is perfect for weeknight dinners or as a crowd-pleasing addition to your next potluck or party spread. 

Ingredients (for 4 servings):

  • 1 lb fresh green beans, trimmed
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and pepper, to taste
  • Optional garnish: sliced almonds or grated Parmesan

Instructions:

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 min., until they are bright green and just tender. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted, add the minced garlic and sauté for 1 min., or until fragrant.
  3. Toss the blanched green beans into the skillet, stirring to coat them evenly with the garlic butter. Sauté for 2-3 min., until heated through and slightly crisp.
  4. Remove the skillet from the heat and sprinkle the green beans with lemon zest. Season with salt and pepper to taste.
  5. Transfer the green beans to a serving platter. Garnish with sliced almonds or grated Parmesan, if desired, and serve immediately.
