Mashed Red Potatoes

Mashed red potatoes are a comforting and rustic side dish that bring Southern charm to the table. With their creamy texture, pops of flavor from garlic, and the added character of tender potato skins, these mashed potatoes strike the perfect balance between hearty and smooth. Simple yet satisfying, they pair wonderfully with everything from roasts to barbecue.

Ingredients (for 6 servings):

  • 2 lbs red potatoes, washed and quartered (skin on)
  • 3 garlic cloves, peeled and smashed
  • ½ cup unsalted butter, softened
  • ½ cup whole milk or heavy cream (more if needed)
  • ¼ cup sour cream (optional, for extra creaminess)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Place the quartered red potatoes and smashed garlic cloves in a large pot. Cover with water, add a generous pinch of salt, and bring to a boil. Reduce the heat and simmer for 15–20 min, or until the potatoes are fork-tender.
  2. Drain the potatoes and return them to the pot. Allow them to sit for 1–2 min to evaporate any excess water. Add the butter, milk (or cream), and sour cream, if using. Mash with a potato masher or hand mixer until your desired consistency is reached—leave it slightly chunky for a more rustic feel.
  3. Season generously with salt and pepper. Stir to combine and taste, adjusting seasoning as needed. Garnish with fresh parsley, if desired, and serve warm.
