Caprese Stuffed Mushrooms

This quick and healthy recipe transforms simple ingredients into a nutritious, restaurant-worthy dinner with minimal effort. Perfect for busy weeknights, this recipe proves that quick and healthy can also be delicious and elegant. Broiled to golden perfection, these stuffed mushrooms are a satisfying vegetarian dinner ready in no time! For added flavor, sprinkle a pinch of red pepper flakes or Italian seasoning on the filling before broiling.

Ingredients (for 2-4 servings):

  • 4 large portobello mushroom caps
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 4 oz fresh mozzarella, cut into small cubes
  • 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
  • 1 tbsp balsamic glaze (optional)

Instructions:

  1. Preheat your oven’s broiler and line a baking sheet with parchment paper.
  2. Remove the stems and gills from the mushroom caps, then lightly brush both sides with olive oil. Season with salt and pepper.
  3. Place the mushrooms on the prepared baking sheet, gill side up. Broil for 5 min. to soften slightly.
  4. Remove from the oven and evenly divide the cherry tomatoes, mozzarella, and basil among the mushroom caps.
  5. Return to the broiler and cook for an additional 5–7 min., or until the mozzarella is melted and bubbly.
  6. Remove from the oven and drizzle with balsamic glaze if desired. Garnish with extra basil before serving.
