Spanish Tortilla

This Spanish classic is simply unbeatable in terms of being filling and delicious. If you don't use too much oil for frying, a piece of tortilla is not too high in calories.


Ingredients (serve 4):

  • 6 medium-sized potatoes, sliced
  • 6 eggs
  • 1 large onion
  • 1 clove of garlic
  • Salt and pepper
  • Olive oil for frying

Instructions:

  1. Peel the onion and garlic, then finely chop them. Peel the potatoes and cut them into thin slices.
  2. In a large pan, heat olive oil over medium heat and sauté the onions and garlic until translucent. Add the potato slices and cook for about 15 minutes, or until the potatoes are soft. Stir occasionally to prevent sticking, but be careful not to break the potato slices.
  3. Meanwhile, beat the eggs in a large bowl and season with salt and pepper. Once the vegetables are cooked, let them cool slightly and then stir them into the beaten eggs.
  4. Add a little more olive oil to the pan if needed, then pour the egg and potato mixture back into the pan, spreading it out evenly. Cook over low heat until the bottom is set and golden brown, about 10 minutes.
  5. To flip the tortilla, place a large plate over the pan and carefully turn the pan over so the tortilla lands on the plate. Slide the tortilla back into the pan to cook the other side for another 5-7 minutes, or until fully set and golden brown.

Remove from the pan and let it cool slightly before slicing and serving. Enjoy!
