An incredibly delicious and aromatic side dish for various meat or fish dishes. You only need:
Ingredients (serve 4):
1.75 lb new potatoes
1 tbsp oil, neutral or olive oil
1 tbsp rosemary, finely chopped
1 tsp sea salt, coarse, slightly ground
2 cloves of garlic, pressed
Instructions:
Do not peel the potatoes (if necessary, scrub them; otherwise, just wash them), pat them dry, and cut them lengthwise.
Finely chop the rosemary needles and mix them well in a bowl with the potatoes, oil, salt, other spices, and pressed garlic. Place the mixture on a baking sheet lined with parchment paper.
Bake in a hot oven at 400°F for about 20 minutes using top and bottom heat. Then, brown them for an additional 5 minutes at 500°F using top heat or under the grill if you have one. The cooking time will, of course, depend significantly on the size and thickness of the potato halves.
