Hummus isn't just something you buy pre-made; with a blender, you can quickly prepare it fresh at home. This allows you to adjust the spice level to your taste or add more herbs. Paired with some flatbread or vegetables for dipping, it makes a delicious, protein-packed meal.
Ingredients (serves 2):
1 15-oz can chickpeas
1/3 cup liquid from the chickpea can
1-2 cloves garlic
Juice of 1 lemon
1/2 tsp salt
1/2 tsp ground cumin
6.5 tbsp tahini
2 tbsp olive oil
Instructions:
Drain the chickpeas and reserve some of the liquid. Set aside a few chickpeas for garnish.
Add the chickpeas and half of the liquid to the blender. Peel the garlic cloves and add them along with the remaining ingredients to the blender.
Blend until smooth and creamy. If the hummus is too thick, add some more chickpea liquid until the desired consistency is reached.
Garnish with reserved chickpeas and serve with fresh bread or crackers.
