Barbecue Chicken Mini Meatballs

These sweet, smoky, and tangy mini meatballs bring big flavor in a bite-sized package! Made with lean ground chicken and coated in a sticky barbecue glaze, they’re the perfect high-protein, mess-free game-day snack. Served on toothpicks for easy grabbing, they’ll disappear faster than a two-minute drill. Set out a platter of these barbecue chicken mini meatballs, and watch them fly off the plate—no forks required!

Ingredients (for 6-8 servings):

  • 1 lb ground chicken
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 tbsp milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh parsley (plus extra for garnish)
  • ½ cup barbecue sauce (plus more for dipping)
  • 1 tbsp honey (optional, for extra sweetness)

Instructions:

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. n a large bowl, mix ground chicken, breadcrumbs, egg, milk, garlic powder, onion powder, smoked paprika, salt, pepper, and parsley until just combined.
  3. Roll into 1-inch meatballs and place on the prepared baking sheet. Bake for 12-15 min. or until cooked through.
  4. In a small saucepan, heat the barbecue sauce and honey over low heat until warm. Toss the baked meatballs in the sauce to coat evenly.
  5. Serve with toothpicks and extra barbecue sauce for dipping. Garnish with chopped parsley for a fresh finish.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
