Zucchini Fries

Crunchy on the outside, and tender on the inside, these zucchini fries are a guilt-free alternative to traditional fried snacks. Coated in a crispy, seasoned breadcrumb mixture, they deliver all the crunch without the extra oil. No air fryer? No problem—bake them in the oven for an equally delicious result!

Ingredients (for 4-6 servings):

  • 2 medium zucchinis, cut into ½-inch thick fries
  • ½ cup all-purpose flour (or almond flour for a gluten-free option)
  • 2 large eggs (or ½ cup unsweetened plant-based milk for a vegan option)
  • ¾ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese (optional, or nutritional yeast for vegan)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Cooking spray

Instructions:

  1. Preheat the air fryer to 400°F. If using an oven, preheat to 425°F and line a baking sheet with parchment paper.
  2. Place flour in one bowl. In a second bowl, whisk eggs (or plant-based milk). In a third bowl, combine panko, Parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Dredge each zucchini strip in flour, then dip in eggs, and finally coat with the breadcrumb mixture. Press gently to adhere.
  4. Arrange the coated zucchini fries in a single layer in the air fryer basket, spraying lightly with cooking spray. Air-fry for 8-10 min., shaking halfway through, until golden and crispy. If using an oven, bake on a lined sheet for 20-25 min., flipping halfway through.
  5. Pair with marinara sauce, ranch, or a Greek yogurt dip for dunking. Serve warm, and enjoy!

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
