Hummus & Vegetable Platter

Skip the store-bought stuff and whip up this creamy, flavor-packed hummus in minutes! Made with simple, wholesome ingredients, this dip is smooth, rich, and perfect for scooping up with crisp, colorful veggies. Plus, it’s easy to customize—add roasted garlic for depth, smoked paprika for warmth, or a swirl of pesto for an herby twist. High in protein and fiber, this hummus will keep everyone satisfied well into the fourth quarter!

Ingredients (for 6-8 servings):

For the Hummus:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp tahini
  • 2 tbsp olive oil (plus extra for drizzling)
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • ½ tsp salt
  • ½ tsp ground cumin
  • 2-4 tbsp water (as needed, for consistency)
  • 1 tbsp chopped parsley (for garnish)
  • ¼ tsp smoked paprika (optional, for garnish)

For Serving:

  • Sliced cucumbers, bell peppers, carrots, celery, cherry tomatoes, and radishes
  • Whole wheat pita bread or pita chips

Instructions:

  1. In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cumin. Blend until smooth, adding water one tablespoon at a time until creamy.
  2. Add more lemon juice for brightness, olive oil for richness, or salt to taste.
  3. Transfer to a bowl, drizzle with olive oil, and sprinkle with chopped parsley and smoked paprika.
  4. Pair with fresh vegetables for dipping, or serve with pita for a heartier bite.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
