Quick Skillet Pasta with Leftovers

You can quickly turn leftover pasta into a delicious and wholesome dish by frying it with eggs.

 

Ingredients (serves 2):

  • 2 cups leftover pasta
  • 2 eggs
  • 1 cup diced bologna sausage or bacon
  • 1 tbsp sunflower oil
  • Salt, pepper, and paprika powder for seasoning

Instructions:

  1. Heat the oil in a skillet.
  2. Briefly fry the diced bacon, bologna sausage, or vegetarian alternative until crispy.
  3. Ensure the leftover pasta is well-drained. This is particularly important if you use freshly cooked pasta, as this dish is also delicious with freshly cooked pasta. Pre-cooked, cooled, and non-wet pasta is especially good for frying. The type of pasta does not matter, although fusilli and other short pasta types are easier to stir in the skillet. Add the pasta to the skillet.
  4. Finally, crack the two eggs directly into the skillet and stir the meat (or meat substitute), pasta, and eggs vigorously so that all the ingredients become crispy. Season to taste with salt, pepper, and paprika powder.
  5. If desired, you can also sprinkle some Parmesan or cheese on top.

Tip: Leftover vegetables can also be used in this skillet.
