Theodore Roosevelt: Fried Chicken
A hearty meal fit for a Rough Rider, fried chicken was one of Theodore Roosevelt’s favorites. Known for his adventurous spirit, Roosevelt enjoyed classic comfort foods, and a crispy, golden fried chicken was the perfect way to satisfy cravings. Roosevelt was a man of action and practicality, and this classic, crispy fried chicken was a filling, no-nonsense meal that matched his energetic personality.
Ingredients (for 4-6 servings):
- 1 whole chicken, cut into pieces
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- ½ tsp garlic powder
- ½ tsp onion powder
- 2 cups vegetable oil (for frying)
Instructions:
- Marinate the chicken by placing the pieces in a bowl with buttermilk. Cover and refrigerate for at least 2 hours, or overnight for extra tenderness.
- In a separate bowl, whisk together the flour, salt, pepper, paprika, cayenne, garlic powder, and onion powder.
- Remove the chicken from the buttermilk, allowing excess to drip off, and dredge each piece in the seasoned flour mixture. Press the coating onto the chicken for a crispy crust.
- Heat the oil in a large skillet to 350°F (175°C). Carefully place the chicken in the hot oil, frying in batches to avoid overcrowding. Cook for 8-10 min. per side or until the internal temperature reaches 165°F (75°C).
- Drain the fried chicken on a wire rack or paper towels to remove excess oil.
- Serve hot with your favorite sides, such as mashed potatoes, cornbread, or collard greens.
