Ingredients (serves 4)
1 onion
2 cloves garlic
3 cans diced tomatoes
1/3 cup vodka
7/8 cup heavy cream
1 lb pasta
1 tbsp fresh parsley
1/2 cup grated Parmesan
Salt and pepper to taste
Instructions
Peel and finely chop the onion and garlic cloves. Sauté them in olive oil until translucent, season with salt and pepper, and add the tomatoes.
Let it simmer for about half an hour, then add the vodka and let it simmer for another 15 minutes to let the alcohol evaporate.
Finally, slowly pour in the cream while stirring constantly.
Cook the pasta according to the package instructions and serve with the sauce, fresh parsley, and a bit of Parmesan.
