Gnocchi with Sage Butter 

Gnocchi are a classic element of Italian cuisine and taste especially good with fresh herbs. You can create quick dishes that everyone will love, like these gnocchi refined with sage.

 

Ingredients (serves 4)

  • 1 lb potatoes
  • 1 pinch nutmeg
  • 3 egg yolks
  • 1 2/3 cups flour
  • 1 bunch sage
  • 2 cloves garlic
  • 1 cup  grated Parmesan
  • 2 tbsp oil
  • 5 tbsp butter

Instructions

  1. Boil the potatoes for 25-30 minutes. Drain in a sieve and let them steam dry. Then peel and finely mash with a fork or press through a potato ricer. Season with salt, pepper, and nutmeg. Add the egg yolks and flour and quickly work into a smooth dough without over-kneading.

  2. Bring salted water to a boil in a large pot. On a floured work surface, shape the dough with your hands into thumb-thick rolls and cut into 1/2 to 3/4 inch pieces. Lightly flatten each piece with the tines of a fork.

  3. Cook the gnocchi in batches in boiling water. Once the gnocchi rise to the surface, cook for another 2-3 minutes. Then remove the gnocchi with a slotted spoon and let them drain. Place them side by side on a baking sheet lined with parchment paper or on plates and let rest for 20 minutes.

  4. Meanwhile, melt the butter in a large pan over medium heat. Add the sage leaves and garlic cloves, and sauté until the sage is crispy and the garlic is fragrant.

  5. Add the cooked gnocchi to the pan and sauté until lightly golden.

  6. Serve with freshly grated Parmesan.
