What an original, creamy, and delicious recipe! You must try it, it's incredibly good and has rightfully become one of the new classics.
Ingredients (serves 4)
3 cups macaroni
1 ripe avocado, puréed
1 clove garlic
2/3 cup Parmesan cheese, grated
2 tbsp olive oil
Salt and pepper to taste
Instructions
Purée the avocado with the garlic, grated Parmesan cheese, olive oil, and a pinch of salt. The result should be a homogeneous mixture, similar to pesto.
Bring water to a boil, salt it, and cook the pasta according to the package instructions until al dente.
Heat a bit of oil in a pan and add the drained pasta along with the avocado sauce. Let the pasta and sauce combine for 2 minutes and add some fresh basil leaves.
Sprinkle with additional Parmesan cheese if desired, and serve.
