Smoked salmon, arugula and feta sandwich on a multi-grain bun

Nothing beats the ease of making a sandwich for lunch or dinner. Vary up your bun selection: baguette, sesame, whole-wheat, poppy seed, etc. Add some fresh feta cheese, smoked salmon slices and arugula leaves. The filling combinations are endless: grilled chicken and cream cheese, Prosciutto and goat cheese, turkey and Cheddar, etc. And don't forget your veggies! If you prefer your sandwich warm, toast the bread or bun first or zap the whole thing in the microwave until the cheese is melted.
