30-minute four cheese bacon pasta bake

Pasta bakes are the ultimate comfort food, and this recipe is no exception. 

Preheat the oven to 500 °F. In a saucepan over medium-high heat, cook 4 slices chopped bacon, 1 small diced onion and 2 minced garlic cloves for 4-5 minutes, until onions are softened. Pour in 3 cups chicken broth, 1 cup heavy cream, 3/4 pound fettucine and 1/2 teaspoon salt. Cover and bring to a boil, then reduce heat to medium-low and simmer until fettucine is cooked through, about 15 minutes, stirring frequently. Pour the creamy pasta mixture into a baking dish, and stir in 1/2 cup Parmigiano-Reggiano cheese + 1/2 cup shredded Italian-style four-cheese blend. Add 1 cup frozen peas, then season with salt and pepper to taste. Stir well to combine. Top with another 1/2 cup of the four-cheese blend, and bake for 5 minutes until the top is melted and slightly golden. Serve immediately.

These salted caramel thumbprint cookies are easy to make and super delicious!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
