Cinnamon palm cookies

Ingredients: 1 1/2 tablespoons softened butter + 3 tablespoons light brown sugar +1/2 teaspoon cinnamon (+ 1 prepared puff pastry sheet for the base)

Preheat the oven to 400 °F. Roll out the prepared puff pastry sheet, and trim the ends to form a rectangle 8 x 10 inches in size. Combine the butter with the sugar and cinnamon in a small bowl, and mix until it takes on a velvety texture. Spread the mixture evenly across the puff pastry sheet. Roll the two long sides of the sheet in toward each other. Press lightly to seal together. Wrap the rolled pastry sheet in cling film, and let sit in the freezer for 1 hour to firm up. Cut the palm-shaped cookies into 1/2-centimeter pieces. Place the cookies onto a baking sheet lined with parchment paper, spacing them out evenly. Bake for 15 minutes until golden brown. Let cool, and serve!
