These little coconut bites have a sweet exotic flair. In a mixing bowl, beat 4 egg whites for a few seconds just to froth them up a bit. Add 2 1/2 cups grated coconut, 1 cup sugar, and mix with a spoon. Continue mixing with your hands to make sure the dough is uniform and the ingredients are well combined. Shape into small balls the size of a large walnut, and bake at 350 °F for 10 to 12 minutes, until the coconut rocks are golden brown.
