Chocolate mousse

You can't beat the rich, satisfying taste of chocolate mousse at just 150 calories per 1/2 cup serving! While this one's quick to prepare, you'll have to wait for it to cool before diving in. Place 1/2 cup semisweet or dark chocolate chips in a microwave-safe bowl and microwave on medium in 10-second intervals until halfway melted, stirring after each interval. The residual heat will melt the chocolate completely. Combine 1 cup plain nonfat Greek yogurt with 1/2 cup unsweetened cocoa powder, sifted, and 1/2 teaspoon vanilla extract in a glass bowl. Microwave for 1 minute, stirring halfway through. Remove and stir in the melted chocolate. In a saucepan, dissolve 1/2 cup sugar in 2 tablespoons water, then increase the heat and boil for 1 minute. Set aside. Using a mixer, whip 1/2 cup liquid egg whites (room temperature) until soft peaks form. With the mixer running, slowly add the sugar water to the egg whites. Beat until the mixture is cool and stiffer peaks form. Add 1 large tablespoon egg mixture to the chocolate yogurt mixture, and stir to combine. Gently fold in the remaining egg mixture. Loosely cover and chill for 30 minutes.

These salted caramel thumbprint cookies are easy to make and super delicious!

INGREDIENTS:

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar
  • Pinch of sea salt
  • 1 cup / 150g of flour
  • 1 cup / 100g of chopped nuts
  • Salted caramel
  • Melted dark chocolate

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
