Crunchy chocolate rochers

Toast hazelnuts in the oven for a few minutes, then grind up in a food processor. Melt chocolate in a double boiler, then add the ground hazelnuts and some praline paste. Form into rochers (small, bite-size rocks) and refrigerate. Meanwhile, melt some dark chocolate in a double boiler, add cocoa butter and 2/3 cup crushed hazelnuts. Dip your 'rochers' in the mixture, then place on parchment paper to cool once more in the refrigerator.
