Assamese fish curry

This sour fish dish from the East of India can be your next quick-fix weeknight curry. We found a recipe with juicy white fish fillets that takes only 15 minutes to make, as it calls for using a pressure cooker. The only spices you'll need are turmeric (haldi) powder, mustard seeds, red chili powder, salt and sugar to taste.  Note: This dish is traditionally cooked using mustard oil and served over a bed of white rice.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
