The idea of eating animal organs might put you off, but when cooked properly and with the right recipe, they can be extremely flavorful and tender cuts of meat. If you're still squirmy about their appearance, we suggest cooking them into a stew. To prepare, you'll need to remove the membrane and discard. Then cut the kidneys in half lengthwise and chop into smaller bite-sized pieces. Make sure to remove the lump of fat in the center as well. Soak the kidneys in a bowl of cold water with an acidic salty solution (lemon juice, vinegar). Drain and cook the kidneys like you would any other stew meat with accompanying chopped vegetables (carrots, onions, potatoes, mushrooms, etc.). Add seasonings or whatever aromatics you prefer, then simmer for 45 minutes until tender and cooked through. Serve with crusty bread on the side.
