These artichokes have nothing to do with the regular globe kind. They taste sweet, nutty and earthy and can be prepared in myriad ways with or without the skin. Just make sure to scrub them clean beforehand. For salads, eat them raw and thinly shaved. If you prefer them cooked, you can slice them thinly like potatoes and give them a good saute or bake them in a cheesy gratin.
