Ube

Ube is a purple yam originating in the Philippines that really puts a pop on your plate, thanks to its bright violet hue. It's prepared pretty much the same way as regular potatoes or sweet potatoes, although you might have to adjust cooking times depending on the method. When pureed or mashed into a paste, it becomes a vibrant ingredient for many recipes and especially baked goods. Use it to color cakes, brownies and ice cream. Or serve it baked with a main dish.
