Venison

Venison is a wonderful, fat-free alternative to beef. It belongs to the family of "game" meats and most often comes from deer, which is what makes it lean and thinner in texture. It's wonderful in steak form, grilled or pan-broiled. Because it tends to lack the marbling and fatty tissue found in beef, it's not the best meat for roasting, as it can become dried out more easily. As for the tougher cuts, you can grind them up and combine with other ground meats for hamburgers or casseroles. Pot roast is another tasty alternative for non-steak-worthy pieces.
