Salmon with Champagne sauce

Arrange the salmon steaks with some Champagne and a little water in a casserole. Add a bouquet garni, 1 carrot sliced into strips, 2 chopped onions and butter. Cook for 20 minutes, then set aside the fillets, keeping them warm. Reduce the sauce, and add some cream. Serve the salmon topped with the sauce, accompanied by white rice or pasta.
