Fruit mousse

Soak gelatine leaves in cold water. Blend raspberries along with a little lemon juice, then let cool and add the gelatine. Heat your Champagne with sugar, and beat egg whites until soft peaks form. Add the egg whites to the Champagne mixture and beat well. Add the fruit mixture, pour into glasses and garnish with fresh fruit.

METHOD

  1. Mix together the blue cheese and cream cheese.
  2. Spread onto toast.
  3. Top with green peas, sun-dried tomatoes, and prosciutto.
