Champagne quail

Flambé the quails, add bacon bits and fry in butter. Pour over some Champagne to add moisture and flavor, and season with salt and pepper. Cook for 15-20 minutes and serve immediately. You can add 1 tablespoon of cream to the sauce for more richness.
