Mixed summer vegetables

This is a great alternative to ratatouille. Cut zucchini into rounds, then red, yellow and green peppers into strips. Place in a pan with sliced red onions, olive oil and rosemary. Roast for about 30 minutes at 400 °F, tossing 3 times throughout the cooking process.
