Ingredients

  • 7 cups chicken broth
  • 1 carton Campbell vegetable broth
  • 1/2 cup of rice
  • 2 carrots sliced
  • 2 sliced celery stalk
  • 1 cup sliced mushroom
  • 2 cup diced cooked chicken
  • 1 cup frozen peas or corn
  • 4 green onion stalks
  • 1 tsp thyme
  • salt and pepper

Preparation

Step 1

bring chicken and vegetable broth to boil

Step 2

add rice and cook over medium heat for about 15 mins

Step 3

add celery, carrots, and mushrooms. cook for 10 mins

Step 4

add chicken, peas, onions, and thyme. simmer for 5 mins

Step 5

season to taste with salt and pepper
