Pineapple Upside Down Cake

Pineapple upside down cakes often use canned pineapple rings but we believe that fresh is the way forward! This scrumptious Thomas Keller-inspired version with a vanilla, dark rum and honey 'pan schmear' is the perfect way to use up a very ripe pineapple that fussy eaters would otherwise not go near.
