Corn Fritters

These corn fritters fold cooked corn (canned or frozen if you're short on time, or boiled or grilled if you've got leftovers on hand) and chives into a creamy batter before plunging bite-sized morsels into a pot of oil for deep-frying.  They're a perfect crispy side to pair with whatever you're grilling or an impressive snack for your guests to nibble on while you cook.
