Boudin Noir Terrine (Black Pudding or Blood Sausage)

Boudin noir is a hearty pork blood sausage popular in Italy, Switzerland, Belgium, Spain, France and Eastern Europe. It's also often included in a typical English breakfast. If the word "blood" makes you squeamish, try eating it in terrine form. It looks like meatloaf and tastes less potent than its sausage counterpart, thanks to the addition of other ingredients such as apples and additional pork bits.
