Seafood gumbo

This comforting dish, native to Southern Louisiana and now commonly associated with New Orleans, traditionally consists of shellfish, celery, bell peppers, onions and okra. A roux is used as a thickening agent, and all the ingredients get simmered up in seafood stock for at least an hour. Spices are essential and applied depending on the style (Creole or Cajun). Spooned onto a bowl of steamed white rice, this is one Southern specialty  you can't pass up.
