Agave Syrup

Extracted from the sap of the agave cactus, this syrup has become a popular sugar substitute among animal-conscious vegans as well as diabetics. Agave syrup is high in fructose and has a higher glycemic index than white sugar, making it less likely to cause blood sugar and insulin spikes — this accounts for its popularity among diabetics. Be careful though: any extra fructose that doesn't get burned as energy during daily activity will still get turned to fat. It's also pretty barren of nutrients, so don't be fooled that this sweetener will provide any super-food health benefits.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
