The extra crispy chicken
What really drives us crazy at KFC is the Extra Crispy Chicken. Here’s a little cheat sheet to get your fix.
Follow the previous recipe and incorporate the following steps:
Before putting the chicken through the flour mixture and egg wash add a spice mixture to the chicken made of:
1 teaspoon basil powder
1 teaspoon dried oregano
Mix and coat the chicken until the spices are well distributed.
To get that extra crunchy texture, make a third coating with crushed sugar-free cornflakes.
Coat in the following order:
First dip the chicken in the egg wash, then dredge in the flour mixture and finish with the cornflakes.
Make sure you use enough deep frying oil, and try to maintain a stable temperature so you don't burn the chicken. Keep a close eye while cooking, and flip as needed.
