My potatoes are sprouting… can I still eat them?

It depends.

If there are just a few small sprouts and your potatoes are still firm, no problem! Just  remove the sprouts with a knife and peel them.

If your potatoes have really sprouted a lot, like in this photo, throw them out. If they are mushy and wrinkly, not only will they taste bad but they could get you sick.

 

To store potatoes optimally:

Buy them in small quantities.

Go for potatoes that are not prewashed.

Keep them in a place that’s neither too hot (heat makes them sprout faster) nor too cold (chilling can make the consistency change faster). Also avoid humidity (humidity can leave them moist).

Put them in a dark space to mimic their natural environment.
