My carrots are sprouting… can I still eat them?

Yes, but...

They lose their flavor a little (they’ve started converting the sugar to grow), but they’re fine. They will probably taste better if you cook them though. However, if you find that they're sprouting and extra soggy, throw them out.

To store carrots optimally:

Keep carrots in the fridge, ideally a vegetable drawer lined with absorbant kitchen paper. If done correctly, they can last up to three months.

Cut off the green parts so they do not rot.

Do not wash until you're ready to use them.
