Rice

Inexperienced chefs tend to cook too much rice, as estimating how much it expands when cooked can be tricky. As a rule of thumb, a 1/4 to a 1/3 cup of rice per person is a good portion size. If you still find yourself with leftover rice, be sure to refrigerate it quickly: keeping it cool will reduce the amount of bacteria growth that leads to spoiling. Rice can also be frozen for up to 2 weeks, so pop it into an airtight container and into the freezer for later in the week.
