Its name doesn't exactly make you think of luscious smoked meats and hearty BBQ eats, but that's what Germantown Commissary in Germantown, Tennessee is all about. Opened in 1981 as a BBQ joint, it got its name from a small country store, and today it's one of the most popular stops for hickory-smoked ribs and chopped pork in Tennessee.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
