Homemade Kombucha

You can brew your own kombucha at home using cane sugar, white vinegar, and live cultures called "scoby" ("symbiotic culture of bacteria and yeast," which you can order online). Just boil the water and sugar before adding black or green tea, then let it steep for at least 30 minutes. Add the scoby and leave the tea to ferment at room temperature for one week to 10 days.
